Becky's Cinnamon Roll Cake

A delicious twist on traditional coffee cake.

Let's get started!


Preheat oven to 350 degrees.


Cake:

  • 3 c. flour

  • 1/2 tsp. salt

  • 3/4 c. sugar

  • 4 tsp. baking powder

  • 1 1/2 c. milk

  • 2 eggs

  • 2 tsp. vanilla

  • 1/2 c. (1 cube) melted butter


Topping:

  • 1/4 c. melted butter

  • 1/2 c. brown sugar

  • 2 Tbsp. flour

  • 1 Tbsp. plus 1 tsp. cinnamon


Glaze:

  • 2 Tbsp. softened butter

  • 2 c. powdered sugar

  • 4-5 Tbsp. milk

  • 1/2 tsp. vanilla (or almond extract - this is Becky's preference)


Directions:

  1. Preheat over to 350 degrees.

  2. Spray 9x13 pan with cooking spray. Set aside

  3. Mix all "cake" ingredients together in a large bowl.

  4. In a small bowl, combine all ingredients for the "topping."

  5. Pour cake mixture into greased 9x13 pan.

  6. Drop spoonfuls of topping on the cake batter in pan and swirl with a knife.

  7. Bake for 30-35 minutes.

  8. While cake is baking, mix together glaze.

  9. Pour the desired amount of glaze over warm cake.

  10. Eat while warm. Yum!
