While I love a crispy-skinned, oven-baked potato as much as the next person sometimes waiting for an hour for the potatoes to cook just isn't an option. For this "baked" potato, all you need is your microwave. This fast alternative makes for a quick lunch or cheap but filling dinner for any college kid on a budget!
Let's Get Started!
Ingredients:
A potato (for bigger potatoes - pay attention to cooking times below)
butter
shredded cheese (we like cheddar)
sour cream
real bacon bits
green onions
any other veggies you want to throw on top
salt and pepper to taste
Directions:
Rinse and scrub potato under water to remove loose dirt.
Poke with fork 6-8 times, in various places (lets steam escape in microwave so it doesn't explode. And trust me, they explode!)
Put on plate and microwave on full power for 5 mins.
Check if potato is soft (if not, cook for 1 more mins and check again, repeating as many times as needed until it's soft)
Remove (careful - it'll be hot). Cut down the middle.
Add butter and cheese first so they can melted from the heat.
Add sour cream, bacon, green onions and salt and pepper to your preference.
