Easy Ramen Chicken Noodle Soup



Ramen is great when you want something quick or don't have a big grocery budget but let's face it - it doesn't feel you up. This twist on basic ramen makes it a little hertier and a smidge healthier.


Great way to use up those chicken or vegetable leftovers!


Ingredients:

1 packet of chicken flavored ramen

2 cups water

1/2 c. leftover chicken

1/2. c. leftover vegetables (or frozen carrots and peas)

1 Tablespoon green onion, chopped

1 teaspoon vegetable oil.


In saucepan, add oil and onions. Cook on medium for 2 minutes, stirring often. Add vegetable and chicken. Cook for 1 minute to reheat. Add 2 cups water. Bring to a boil. Add noodles and seasoning pack. Cook for 3 minutes.
