I first had these when I was helping as a cook at a church girls' camp. Emily was the head cook and I loved these delicious muffins! They're a little bit like carrot cake, a little bit like an apple cinnamon muffin, and all parts yummy. She topped her with a streusel topping too! So you can do that as well!
Let's Get Started!
Ingredients:
2 ¼ C flour (can use ½ white flour and ½ whole wheat flour)
½ t salt
1 T cinnamon
2 t baking soda
1 ¼ C sugar
3 eggs
1 C oil
8 oz can crushed pineapple
½ C coconut
1 C shredded apple
2 C grated carrots
½ C raisins
½ C chopped nuts
1 t vanilla
Directions:
Mix dry ingredients well.
In separate bowl mix sugar, eggs and oil together.
Add dry ingredients, and then add the rest of the ingredients just until mixed, do not over stir. Stirring too much gives the muffins a spongy texture.
Pour into muffin tins
Bake in a 350º oven for 25-30 minutes.
