Honey Sweet Southern Cornbread

It took me years to be won over by cornbread. And this recipe is what did me in. Sweet, soft and oh so good.


Let's Get Started


Ingredients:

  • 1 1/2 c. cornmeal (quaker brand is my preference)

  • 2 1/2 c. milk (I use 1 % - higher fat milks make it more crumbly, but work)

  • 2 c. all purpose flour

  • 1 Tbsp. baking powder

  • 1 tsp salt

  • 2/3 c. white sugar

  • 2 Tbsp. honey

  • 2 eggs

  • 1/2 canola (or vegetable) oil

Preheat oven to 400 degrees


Combine milk and cornbread in large mixing bowl. Let rest for AT LEAST 5 minutes.


Add remaining ingredients and whisk together until smooth.


Pour into greased 9x13 pan. Bake at 400 degrees for 30-40 minutes. Done when edges are golden brown and a toothpick or knife comes out clean from center.


TIP:

Can also be made into muffins. Those cook at the same temperature for 12-16 minutes.
