It took me years to be won over by cornbread. And this recipe is what did me in. Sweet, soft and oh so good.
Let's Get Started
Ingredients:
1 1/2 c. cornmeal (quaker brand is my preference)
2 1/2 c. milk (I use 1 % - higher fat milks make it more crumbly, but work)
2 c. all purpose flour
1 Tbsp. baking powder
1 tsp salt
2/3 c. white sugar
2 Tbsp. honey
2 eggs
1/2 canola (or vegetable) oil
Preheat oven to 400 degrees
Combine milk and cornbread in large mixing bowl. Let rest for AT LEAST 5 minutes.
Add remaining ingredients and whisk together until smooth.
Pour into greased 9x13 pan. Bake at 400 degrees for 30-40 minutes. Done when edges are golden brown and a toothpick or knife comes out clean from center.
TIP:
Can also be made into muffins. Those cook at the same temperature for 12-16 minutes.
