This might not be a Chuy's knock off (that's this one) but dang it's good! It's honestly a little bit like the Cafe Rio salad dressing! We eat this with french bread most of the time. Seriously! We blend up a limey batch, buy a fresh loaf from our local grocery store, rip off chunks and dig in. So...SO good.
If you're familiar with Chuy's version of this dressing, this one will have a stronger lime and cilantro flavor than its famous counterpart. You can also take out some of the jalapeno and this is a pretty close match the Cafe Rio's tomatillo dressing! Either way, you're going to want to eat it often, and in large quantities!
Yields about 2 cups.
Let's Get Started!
1 cup kraft mayo (you can use other brands, but I like the end product kraft gives)
1 cup milk
3 Tbsp. HIDDEN VALLEY ranch powder (or one dressing mix packet)
1 Tomatillo, skinned and cut in quarters
1-2 tsp fresh lime juice
1/2 tsp. minced garlic (or one small clove)
1/2 bunch of cilantro (about 2 large handfuls), stems removed (or as many as you can)
1 jalapeno - seeds and all! (fresh, not jarred)
Cut tomatillo in quarters. Cut off stems of one jalapeno and cut into large chunks. Pull off as many cilantro leaves as you can from the bunch. It's okay if you don't get them all or if a few stems get in there, it'll blend fine. Add all ingredients into a blender and puree until smooth and green!
There is some guess and check to this recipe. But you'll figure out what you like over time. I usually start with one teaspoon of lime juice and then taste, adding the second if it needs it. Same with cilantro, you can add more if it's not strong enough for you. Sometimes it's also nice to have a second jalapeno in case the first one didn't give enough spice but be forewarned... this gets hotter as it sits!
Serve with tortilla chips, french bread or over your favorite taco or salad!
