This recipe came to me from my mother. Who got it from her mother, who got it from her father. Papa Hutton not only loved to bake, but I am told he was an amazing gardener. He had one rose bush he trained up that ended up looking like a tree, according to my mom.
We love this simple banana bread, especially warm out of the oven and with lots of butter.
Let's Get Started!
Ingredients
1 c. sugar
1/2 c. shortening
2 eggs
1 tsp. baking soda, dissolved in a little water
4-5 ripe bananas, mashed
2 c. flour
Dash of salt
1 c. nuts (optional)
Directions
In a large bowl, beat together shortening and sugar. Add eggs. In a separate bowl, mash bananas. Add dissolved baking soda to bananas and stir. Add banana mixture to the shortening mixture and mix together. Add flour and salt (and nuts, if you want). Stir just until combine. Grease *two large or 4 small loaf pans. Bake is slow oven (300 degrees) for about 1 hour, or until a toothpick comes out clean in the center.
*The recipe makes shorter loaves when using the large bread pans. If you want one tall, full loaf, put all the batter in that one pan and cook for more time.
