Streusel Coffee Cake



This is a family favorite.


We call it streusel, you might call it coffee cake. I'm not sure who's right. Streusel is just what we've always called it. So call it streusel, call it coffee cake, I don't care. Just make it, eat it and love it.


Feeds: 6-12 people

Preheat Oven to 350

Grease a 9×13 pan


MAKE TOPPING:

In small mixing bowl add:

1/4 c. (or 4 Tbsp) of room temperature butter (not melted)

1/4 c. flour

1 c. brown sugar

1 Tablespoon of cinnamon


Mix into a crumble with a fork, then set aside.


MAKE CAKE BATTER:

In a large bowl mix together:

3 c. flour

1 1/2 c. sugar

4 tsp. baking POWDER

1 tsp. salt

1 tsp. mexican vanilla (if you don’t have mexican vanilla – just leave vanilla out)


Then add:

1 c. milk

2 large eggs (or 3 medium)

1/2 c. oil


Mix together by hand with spatula or wire whisk just until all dry ingredients are mixed in.


Don’t overmix.


Add to greased 9×13 pan.


Sprinkle crumble mixture over the top.


Then using a handle of fork or spoon, push a deep 3 by 4 grid pattern into the top of the cake (so that the handle reaches the bottom of the pan). Let the crumble topping fall into these cracks. Then use your fingers to spread loose crumble to help hide the cracks, until the crumble on top is more evenly spread (same idea as swirling in the topping, but a little more methodical) :)


Bake at 350 for 30-40 miuntes until toothpick/knife comes out clean. If you over bake it will get crumbly.
