This pie quickly became a family staple after Becky made it at a family get together. It may seem like a summer pie only, but no siree bob - we make this for every holiday under the sun. This is hands down my kid's favorite pie, it even pushed the beloved chocolate cream out of first place!
This needs fresh fruit, not frozen, so it can cost more to make in the offseason, but we think it's worth every penny! My mother in law once made it with fresh peaches instead of strawberries (leaving everything else the same). It was AMAZING!

Ingredients
1 blind-baked pie crust - Try this recipe.
1 c sugar
3/4 c cool water
4 cups cut, fresh strawberries
3 Tbs cornstarch
4 Tbs strawberry jello powder
1 Tbs fresh-squeezed lemon juice (straight from the lemon)
Directions
Prepare pie crust and cool completely.
Whisk together sugar and cornstarch in a small pot.
Add water and bring to a boil, whisking constantly until thickened.
Remove from heat and add jello powder and lemon juice.
Whisk until incorporated.
Allow to cool 30 minutes before adding fruit (you'll cook the strawberries if you add immediately).
Once cooled, add strawberries and stir until coated.
Pour into prepared pie shell and chill for at least 4 hours till filling is set.
Top with whipped cream or whipped topping.
