Ingredients:
1/2 c. butter, softened
1 1/2 c. sugar
2 eggs
1 c. sour cream
1 tsp. vanilla
2 c. flour
1 tsp. baking soda
1/4 tsp. salt
2 medium overripe bananas, mashed (about 1 c.)
In mixing bowl, cream butter and sugar. Add eggs, sour cream and vanilla. Combine flour, baking soda, and salt. Gradually add to cream mixture. Stir in mashed bananas. Spread battered on greased cookie sheet / jelly roll (cookie sheet with sides).
Bake at 350 for 20-25 mins. Let cool.
Frosting:
1 pkg. cream cheese (8 oz)
1 stick butter (1/2 c.)
2 tsp. vanilla
2 1/2 - 3 1/2 c. powdered sugar
Mix cream cheese, vanilla and butter together. Add powdered sugar to the desired consistency. Spread over cooled banana cake.
