INGREDIENTS
FOR THE CRUST
2 cups flour
1 cup butter
1⁄2 cup powdered sugar
FOR THE FILLING
4 eggs (beaten)
2 cups sugar
4 tablespoons flour
1⁄4 teaspoon salt
4 tablespoons lemon juice
2 drops yellow food coloring (or blob of gel food coloring on the end of a toothpick amount) – optional
DIRECTIONS:
Cream together ingredients for crust (will be a little crumbly) and press into bottom 9 x 13-inch pan. Bake for 20 minutes at 350 degrees.
While that’s baking, mix together filling ingredients and pour over first layer. Bake 25 minutes. Sprinkle with powdered sugar while warm (if you put on too much powdered sugar they’ll make you cough when you eat them from sucking the powder in) 🙂
