Nicole's Peanut Butter Bars



I showed up at my friend Nicole's house when I was 12 or 13 and she and her sister were making these. She admitted that they usually just made the dough and ate it but decided to actually bake them this time so I could try them "the real way." I'm so happy she did. This peanut butter bar quickly became a staple in my house growing up and has carried on to be a staple for my children too.


Let's Get Started!


Ingredients:

  • 3/4 c. softened butter (works fine with melted butter too)

  • 3/4 c. sugar

  • 3/4 c. brown sugar

  • 1 egg

  • 1/4 c. peanut butter (I prefer creamy)

  • 3/4 tsp. baking soda

  • 1/2 tsp. salt

  • 1 1/2 tsp vanilla

  • 1 1/2 c. flour

  • 1 1/2 c. oats (I prefer quick oats for this one)

  • Chocolate Frosting (can also used store-bought, if preferred)



Directions:

  1. In a large mixing bowl, mix together butter, sugars, egg, peanut butter, baking soda, salt and vanilla and blend with mixer until light and fluffy.

  2. Stir in flour and oats.

  3. Mix until just combine.

  4. Add to greased 9x13 pan.

  5. Bake at 350 degrees for 15 minutes or until edges are golden brown.

  6. May look like it's not done when it comes out but it's okay.

  7. Immediately frost while it's still hot, frosting will melt, which is perfect. Spread it around evenly.

  8. Let cool for at least an hour before cutting.

  9. Cut into bars and serve.
