This soup has been in my family for as long as I can remember. It was the "leftovers" soup. Whatever veggies we had left from various dinner and my dad would magically make it into this delicious soup (well, most of the time it was delicious).
My version is has simplified over the years. I've narrowed down what veggies made it into the pot based on my super picky eaters. Feel free to add whatever vegetables your family likes. You really can't go wrong.
Let's Get Started!
Ingredients:
1 lb. ground beef (browned, seasoned with salt and pepper and then grease drained off).
1 medium onion, diced
2 c. carrots, peeled and diced
1 green bell pepper, diced
3 medium potatoes, peeled diced into bite-sized pieces
1 clove garlic, minced
8 c water
2 cans tomato sauce
1 taco packet (we like taco bell original)
1 Lipton onion soup mix
2 bouillon cubes (or 1 can chicken broth)
1/2 tsp. oregano
Directions:
Browned meat on medium-high heat in soup pot, then drain off grease.
Return pot to heat. Add onions, peppers, carrots and potatoes - cook for 5 minutes. Add 1/4 c. water if veggies start to stick to the bottom.
Reduce heat to medium and add garlic - cook for 1 minute.
Add water, tomato sauce, taco seasoning, onion soup mix, bouillon and oregano.
Let simmer for 10-15 minutes until potatoes and carrots are tender.
Remove from heat and let cool for 15-30 minutes before serving.
