Marion is my husband's grandmother on his Dad's side. She was short and spunky, played a wicked game of Uno, and was the genius being a handful of my recipes on this site, including this family favorite potato salad. It's simple and creamy with just the right amount of seasoning. If your family doesn't love eggs, feel free to leave them out. We miss you, Grandma Porter!

Ingredients
5-6 med Red potatoes
1 small onion, chop onion
3 hard-boiled eggs
1 tsp salt
1 tsp seasoning salt like Johnny’s or Lawry’s
2 tsp Beau Monde seasoning*
Sauce
1 C mayonnaise
1 C miracle Whip
1 ¼ C cream
Directions
Boil Potatoes with skins on until fork tender.**
Mix seasonings in a small bowl.
Peel and cube potatoes.
Add half of the potatoes, 2 TBS onion, and one hard-boiled egg (chopped) to a big bowl.
Pour half of the seasonings on potato mixture and mix.
Repeat with the second half of the ingredients.
Mix Sauce in the bowl.
Add most ¾ of the sauce and mix well.
Refrigerate overnight.
When ready to serve, add more sauce if it looks too dry.
Tips
*This Is a celery salt-based seasoning from Spice Island.
**Instant pot the potatoes: 10 min high, natural release. 2 C water.
You can add mustard and relish if you like that in your potato salad.
Also - the original recipe called for Bon Appetite - a McCormick spice - but it has been discontinued. It had MSG and so Jean did Lawry so feel free to add it if you so desire.
