You can use whatever vegetables your family likes for this recipe. The ones I list below are just what we like.
Preheat oven to 450 degrees.
4-5 carrots, peeled and sliced
3 potatoes peel and cubed
1 bell pepper, any color, cored and cut in slices
1/2 onion, cut in strips
Add vegetables to pan and toss in oil. If you prefer, you can add the vegetables to a gallon sized zip loc bag, add oil to bag with veggies, toss and then dump on cookie sheet.
Spread out veggies so they are touching as little as possible. Bake at 450 degrees for 20-30 minutes or until carrots and potatoes are tender. Lower temperature to 400 if your onions start to char.
Use METAL spatula to loosen veggies from pan (plastic spatulas might leave the yummy browned parts on the pan). Season with salt and pepper or with salt and Mrs. Dash seasoning. Delicious with any protein or on their own.
